A bit of a late response, but...
This pilot is entering supercruise over 21,000ls from the centre of the system, hence the immediate climb to 300c.
VY Canis Majoris's visual appearance is a bit misleading, as it's a supergiant with a radius of 1,420 solar radii but is only 17 solar masses. What you're looking at in the video is a big puffball larger than Jupiter's orbit.
