From Elite Dangerous Wiki

The ship you use for escort also depends on what ship that your escort is using and the types of enemies they encounter a lot. A multi purpose ship doesn't need as strong a fighter as they can manage them selves for a reasonably substantial amount of time even with not much or no shields, so a moderately light fighter like the Viper mklll will do. These types of fighters will need only a power and thruster upgrade to power some weapons and make up for any lack of ajility that a trading ship might have. Why no sheild upgrade? If the pirate has priotised the cargo ship as its target, you won't be in as much combat and won't need to spend credits on shields.

A larger cargo ship(which I consider Python size or larger), however, should use a moderately ajile heavy fighter,(Asp, Vulture). This provides a reliable way of killing the attacker or providing a long enough time to let the freighter jump out. A standard combat build works well.
