I don't get interdicted more often with better NPC ships, but I tend to get interdicted with much more powerful ones. I stopped being attacked by Adders and Sidewinders as soon as I got an Asp Explorer. And now I'm on the Python I rarely get attacked by anything smaller than a Federal Dropship.
