From Elite Dangerous Wiki

Why does a a battle ship on sea would then need a crew of several hundred people?

=> maintenance => gun array => anti-boarding team => mechanics => Captain / Pilot / Radio / etc...

Why should a plane need two pilot and a radio plus a crew onboard when you take a flight to go to another country? Well, it wouldn't need you onboard too ;)

There's thousand of reasons a vessel needs people onboard... a Battleship like, for exemple, aircarrier Nimitz, need 5000 people onboard... The pilots of the planes, the mechanics of the planes and helicopters, the ship mechanics, the weapons mechanics, the "cleaners", the anti-boarding team, the boarding and ground assault teams, the maintenance guys (aren't the same as the guys cleaning the ship for the same reasons the mechanics are different for every part of the ship) and the "Captain's crew (which is about 30-50 guys)... Counting the fact someone cannot stay awake 24/24 365 days a year, you need rolls... means, there's a lot of people because the ship is rarely standing doing nothing in a harbor... ;-)
