From Elite Dangerous Wiki

"There would be absolutely no point in having piloted spaceships so far in the future, man."

Electronic Counter-Measures are a thing that don't work on humans.  Thus humans get used instead of robots which can be countered, since not doing so would mean losing.

I mean, the game's lore freely admits Drones were a thing before "Effective Countermeasures" were invented.  And if you ever used a Turret or Gimbled mount weapon you know Chaff and ECM are very strong counters to you, and thats just a computer controlling the turret.  What if that sort of thing worked on the entire ship, much like a more invasive Limpit Controller?

As for Trading and Exploration, you would either need an AI (Which we already covered would easily countered/controlled by any fighting ship so would be a very bad investment indeed) or you would need some form of remote control that could be accurate over thousands of light years which clearly doesn't exist in this universe.

So, nope, automated ships would be a pretty bad idea and the reasons for it are pretty solid being supported by the game's lore, it's mechanics as well as all being things we have today (ECM, Chaff and Remote Hacking are all things which exist) means it's not too strange to think we would have greatly souped up versions of them in the future.
