Sensors do not effect accuracy. It only quickens the snap-to after the target being out-of-LOS.
If you take a look, you will see that Rate of Fire is lower on the fixed weapons. This mean you use less ammo for the same amount of DPS of the gimballed, assuming you are a good pilot and does not miss.
