On the one hand, it's not really an issue of "larger ships" because the Krait, Python, and Alliance Crusader - all of which are way, way heavier than an AspX - decelerate much faster.  In fact, a DBX has only 20t less hull mass and still decelerates in half the distance, and the DBX is known for being the most sluggish 4 manuverability rating ship in the game.  (It's not awful, but go from a Vulture to a DBX and you're going to be in for a real shock.)

On the other hand, it is entirely within even a novice pilot's ability (like me) to compensate for it when doing non-combat activities.  Docking, landing on planets, mining, etc are all very, very easy.  In combat an AspX will get owned very fast despite the number of hardpoints (unless you're up against really weak NPCs and using turrets) but for any non-combat scenario, it's more manuverable than it really has to be.

That said, if you really can't handle it, you could always sacrifice 4t of cargo space for a Docking Computer.  Even though I have zero issues with it myself, I run one just because I'm lazy.  (That, and the computer is WAY faster than I could ever be at outposts.  Stations it's about the same speed as me but again, I'm lazy.)  Due to the large number of internal bays, you can mount one without any real drawback.  Unlike, say, the DBX (which I still love) where you just don't have the slots to spare for one.

All-in-all, it does feel more sluggish than a ship of this tonnage with these engines should be, but if you can't reliably dock it, the problem is the pilot, not the ship.

Keep in mind the sluggish handling is probably for balance reasons.  If one ship could easily do everything the AspX does AND keep 4 fixed or gimballed weapons on target, it'd be the most OP ship in the game.  It has to have SOME downside.
