If you get interdicted, put everything into engines and submit. Immediately boost ASAP and power up the FSD as you go. Submitting to interdiction doesn't incur a FSD cooldown the way being pulled out of SC does. If you do it right you should be out of weapon range very rapidly and ready to SC as soon as it finishes charging.
