From Elite Dangerous Wiki

In regards to having 1 or 2 AFMUs, two things:

1) If your AFMU gets completely damaged, reboot the ship.  It will come back online with 2% health.  Your AFMU is essentially the one and only immortal component in your ship, meaning you do not need 2 AFMUs so you can repair one with the other.

2) AFM Refill is rather cheap, see https://elite-dangerous.fandom.com/wiki/Synthesis#AFM_Refill

You can make a quick trip out to the crystal fields (I personally recommend the HIP 36601 system because you can max out 4 different grade-4 rare raw materials in a single system there) before your big long excursion, then trade that stuff in and easily have several hundred AFM refills.  Through the magic of AFM Refills, the amount of ammunition you have really isn't relevant - you could easily damage every single component down to 2% dozens of times and still have plenty of AFM ammo with enough materials for refills.

Given this, no, you never need more than a single AFMU.  I personally recommend a B grade AFMU because unless you're doing in-combat repairs, the speed difference isn't important, and unlike almost every other component, all AFMUs are weightless, so a B grade isn't any heavier than an A grade.  Also, B grade will use less power, though with proper module priorities that shouldn't matter.

tl;dr Just get one AFMU, and get a B grade for anything except combat.  Go A grade for combat only.
