1. Nope, sorry man. it's too big and you'll end up hitting chunks all over the place. Until, and if, they come out with cargo scooping drones, it's not viable. 

2. No need to defend yourself. NEVER mine at an RES. find a pristine metallic ring and just drive anyold where into the ring slowly. You'll be able to mine and npcs will just about never bother you. (every few hours a police or other miner "might" and thats a big "might" show up. I would go 5+ hrs without any npcs showing up most of the time)
