Because when you lose your canopy, you also lose the HUD.  If you're great at lining the ship up to the mailslot without any HUD whatsoever, that's fine, and with the Phantom in particular, ringing the mailslot is actually very easy anyway.  But try docking a T10 or even a Conda without a HUD.  It's suicide.
