Essentials:

-) Fuel Scoop: Won't get far without that

-) 2x Auto-field Maintainance Units: If you do very long trips, you will need that

-) Discovery/Detailed Surface scanner: Without those, your exploration mission becomes a sightseeing tour

Optionals:

Fuel bay: To extend your range without needing to refuel

SRV: For driving around and stuff

Fighter: Nothing beats getting out of the cumbersome conda and racing down a planet's surface for a change of pace.

Shields: To make planetary landings more forgiving. Now you won't scratch the paint with a rough touchdown.

Alternatively:

Arm a federal corvette to the teeth and drag it all the way to Sagittarius A*. Then start salt mining...
