What I found works really well, espcially if your scanner doesn't pick things up [I'm stuck with the basic scanner for now, which seems to find the valuable stuff at 500 LS's but the icy bodies and the smaller metal planets you have to be within 100 it seems] you should fly out from the star about 1000 or 2000 light second. Look at the star, then adjust your flight so that you're looking at a distant star, or a familar object that leaves the star still in view. Accelerate and bam, once you're cruising at 20 or 30 C the planets really stick out like a sore thumb.

For stars, you just want to look at the orbital plane of the star you're close to. Generally a star will have a sort of oblong path like an oval, if you look towards the long ore short side [ the two furthest away from eachother, i forget what they're called] there should be a really bright star like thing in the sky. Once you're done exploring the planets around the first star, dive perpendicular to the first stars orbital plane, and then towards where you think the other distant star is. Once you get going [generally i find] about 400+ C you can see it slowly sliding across the screen.

To be sure you have the star in sight, you want to shift side to side, like a snake slithering across the ground. You can adjust for paralax this way, seeing the planet/star shift slightly back and forth. This is great for keeping planets you have caught by eye, but not by scanners, in your sights.
